Founder and chef, Ken D. Kaplan, has more than 36 years in the restaurant industry and has operated NY Soup Exchange since 1998. Recently, he rebranded the local lunch favorite as Austin & Daniel’s NY Soup Exchange to include a full menu of healthy lunch choices.
Ken’s vast experience in fine cooking throughout the U.S. has allowed him to stay current in the ever-changing food service industry. His time spent living in other parts of the country has helped to influence his creation of ethnically inspired recipes that delight all taste buds.
Simply stated, Ken likes to feed people. Born and raised in New York, Ken has a feel for what Long Islanders want. His style of cooking developed because of his family's history of heart disease, which opened his eyes to alternative cooking methods such as steaming and grilling to create healthy menu items.
